Talking Cedar is a new 35,000 sq. ft. Distillery-Brewery-Restaurant in Grand Mound, WA. We are owned by the Chehalis Tribe and partner with Heritage Distilling Company (HDC). Our facility includes a 15,000 sq. ft. tribally-owned tasting room and distillery, with 8 fermentation tanks for the production of licensed HDC Spirits and hand sanitizer. We also have a 60 barrel production floor for Talking Cedar Brewing, creating craft brews on site. At our restaurant you will be able to enjoy not only our craft spirits and beer, but our upscale pub food with locally sourced ingredients.

Hi, my name is Adam Adrian and I am the new Restaurant Consultant for Talking Cedar.
I am originally from LA California and I attended college at the University of Oregon where I earned a Bachelors of Science Degree. Since then, I have spent 20 years in the restaurant industry.
I have taken part in the creation and opening of multiple local restaurants including Ramblin' Jack’s Ribeye and Mercato. I am the managing partner of a large restaurant group as well as being the Restaurant Consultant.
My passions are good wine, good beer, good spirits and good food. Skiing is my favorite way to spend time with my wife and two sons.
Talking Cedar is a great new opportunity and will be another destination spot to add to the Tribe’s list.
Hi, my name is Stephen Pavletich and I am the new General Manager for the new Talking Cedar Restaurant.
I am originally from Grays Harbor and attended the Grays Harbor College and Eastern Washington University where I earned a Bachelors Degree.
After school I became the Front– of-House manger at Rediviva Restaurant in Aberdeen and was the Wine Program Director at the Ocean Crest Resorts in Moclips.
My last position was also a passion project, being the General Manager for Swing Wine Bar for 5 years. I am an avid Seattle Mariners fan and have followed them to Tokyo, Japan.
I look forward to this new challenge and am excited to deliver a restaurant experience that you deserve.
Hi, my name is Adam Setterstrom and I am the Executive Chef for the Talking Cedar Restaurant.
I am from Tenino and attended the Culinary Institute of America in New York where I earned my AOS in Culinary Arts. I dove right into the restaurant business and have not looked back over the last 25 years.
I have taken part in all facets of running and managing a restaurant, from cooking to staffing, from food cost to menu creation.
I have worked at prestigious restaurants from Lena’l, Hawaii to New York and back to Olympia. When not working I spend time with my girlfriend and kids, and enjoy my passion of race car driving.
Crafting the menu and experience at Talking Cedar is a challenge that I relish and will ensure meets your high expectations.
Hi, my name is Jason Summers and I am the new General Manager for the new Talking Cedar Brewing.
I am originally from Washington and attended Grays Harbor College, where I also played basketball.
I have spent the last 15 years in the beer industry and taken part in every aspect, from coming up with brews, to bottling and branding.
My favorite beer is an IPA, and outside of beer sports is my main passion. I love basketball, baseball, football, and I LOVE golf. It was through sports I met my wife and we have a son.
I am excited to craft the flavors you will drink at the brewery and take home to your family and friends. One last thing, bring back the Seattle Sonics!!
Hi, my name is Bill Lundeen and I am the Head Brewer for Talking Cedar Brewing.
I am originally from Portland and have been involved in brewing since ‘86. I walked into Bridgeport Brewery, tried their beer, and knew that I wanted to be part of it.
I asked for a job and ended up being their head brewer for 6 years. My last position was at Harmon Brewing in Tacoma, where I was part of designing and building their brewery. My favorite part about brewing is the endless ability to try something new and that you can never plateau.
Outside of brewing, I am an avid mushroom hunter and outdoors-man. I also enjoy sharing my love of the outdoors with my family. I look forward to being able to bring my creativity to this project and creating the excellent brews you deserve.
